I was lucky to be able to taste these world class wines presented by Stefano Illuminati in the Texas Hill Country while he visited Mandola Estate Winery in Driftwood, as Chef Damian Mandola and Chef John Lichtenberger prepared a paired dinner.
ILLUMINATI COSTALUPO
Controguerra D.O.C.
The Controguerra D.O.C. is unique in Abruzzo. It is, in fact, a recognition of the higher quality of wines produced in its territory where fortunately these vineyards are situated. The varietals of grapes selected for the production of the Controguerra D.O.C. wines are produced from a much more restrictive territory with a lower grape yield per hectare – much lower in respect to the old regulation “Trebbiano d’Abruzzo.” The “Costalupo 1997” moves up to the level of “Controguerra D.O.C.,” substituting the Trebbiano d’Abruzzo D.O.C.+ The grape varietals used in the Costalupo are Chardonnay, Passerina, Riesling, Malvasia, and Trebbiano; all varietals which accentuate the most delightful fragrances in this wine. It has a brilliant straw-like color and a dry, fresh taste with a delicately refined flavor. The aroma is fruity, floral and delicate. This wine is a perfect companion to all seafood dishes, antipasti, white sauces and light meats. Serve chilled.
ILLUMINATI RIPAROSSO
Montepulciano d’Abruzzo D.O.C.
“Riparosso” is a D.O.C. wine made from 100% Montepulciano grape from the vineyards situated in the township of Controguerra at 300 meters above sea-level. The soil is comprised of a composite mixture tending towards a high argilla clay content. The name of this wine comes from the neighboring gullies known as “Ripe” and the soil, which verges on red (Rosso). Riparosso is made with temperature controlled maceration of the grapes and dregs and subsequent temperature controlled fermentation.
The color is an intense ruby red with a distinct, pleasant vinous fragrance. The flavor is dry and savory with soft tannins. Riparosso is a great accompaniment with roasted or braised red meats as well as poultry and savory dishes: ideal with lamb. Without a doubt a delicious red wine and one of the best buys in all the red wine categories. Serve at room temperature
Montepulciano d’Abruzzo D.O.C. Riserva
“Zanna” is a vineyard designated D.O.C. Riserva wine comprised of 100% Montepulciano d’Abruzzo grape. The soil in the “Zanna” vineyard has a low level of porosity made up of two types of clay – marmosa and argilla (very dry and fine clay composite). Cloning, method of cultivation, and carefully chosen vintages are important factors that add to Zanna’s perfection. The fermentation occurs in stainless steel containers at a controlled temperature between 26º – 28º C. Aging is done in Slavonic oak and barrique. The wine is then aged in the bottle in the cellar for at least one year before release.
The color is an intense ruby red with an aroma that is faintly reminiscent of dried fruits and flowers. The flavor is one of great substance, velvety and elegant. A delight when served with savory sauces, pastas, red meats and game as well as aged cheeses. Serve at room temperature.
